I tweeted the other day about how we were having my Monnie's chicken spaghetti for dinner. C.C. asked for the recipe and I am ever so happy to oblige!
Before I post the recipe, I must confess that raw chicken absolutely freaks me out. In lieu of the fresh meat used in the following recipe, I use two cans of chicken breast chunks (in water). I shred the chunks, which makes the dish really smooth. Call me a chicken (hee, hee), but I do not feel I can get my kitchen clean enough after handling it. Especially when I still have a child who occasionally licks the dirty dishes in the dishwasher and scoots her bare bottom across the floor. :)
If you really want to knock your socks off, I suggest not trying to make this recipe using healthier ingredients. I substitute whole wheat spaghetti and 2% velveeta sometimes, which works okay, but we can definitely tell a difference. Don't say I didn't warn you.
Now on to the good stuff:
Monnie's Chicken Spaghetti
1 hen or 2 fryers
1 stick margarine
1 medium white onion, chopped
1 large bell pepper, chopped
1 can Ro-Tel tomatoes, undrained
1 1/2 lb. Velveeta cheese
1 cup chicken broth
1 lb. spaghetti
1. Preheat oven to 350 degrees.
2. Boil the chicken and remove the meat from the bones.
3. Saute the onions and bell pepper in the margarine until soft.
4. Cook and drain the spaghetti.
5. Add the broth to the spaghetti.
6. Cut up the velveeta into cubes and let melt with the broth and spaghetti.
7. Add the chicken.
8. Add the bell pepper and onion mixture.
9. Add the Ro-Tel and stir until all ingredients are blended together.
10. Pour into casserole dishes.
11. Bake until cheese is bubbly.
This recipe freezes well. It is even better the next day, straight from the fridge as a snack or reheated for lunch.

Some of you may remember me talking about how we're trying to eat healthier. We were rolling right along and doing really well until we realized it was the last week of summer vacation and we wanted to EAT!!!!
This week, I made all of our favorites. Starting tomorrow, it's the Shred for me and all the coke and sugar leaves the house. :)
Not tonight, though. Tonight we're having something we have not had for a couple of months. Tonight, we shall drown the dread of Lane having to return to school in a true red meat and potatoes fashion. Steaks, salads swimming in ranch, loaded baked potatoes, and Chocolate Thunder From Down Under for dessert. YUM!
Sigh. Still dreading tomorrow. It was such a fun summer. So sad to see it end. Boo hoo hoo. :(
