Hello! My name is Jill. Ever heard of Sneaky Momma? That’s me!

I am married to an absolute saint of a man. We live in Texas with our two little girls, ages 4 and 5. I am blessed to be able to spend my days taking care of my family, a job that I adore. My days are filled with love and laughter. Can’t beat that!

When I‘m not busy with my family, I love to help others with their blogs. I’ve written tons of free, easy-to-follow tips that can be found on my blog, Sneaky Momma Blog Design. I’ve been a professional blog designer for a little over three years now. I absolutely LOVE helping to make the blogging world a prettier place!

A Few of My Favorite Things

My favorite things???...Well, I love my Spring Snow Crab tree in the Spring time, I adore my children when they giggle and don't know I am watching, I LOVE double dipped chocolate peanuts and NOTHING can beat a really good idea! But I am smitten with customers who send me finished pictures of Twin Stitchers stitcheries! And I am going to share some with you! But first, remember how I blogged about my love of Roosters in my "barn lovin'" kitchen? Well, I just framed Rise and Shine and I wanted to show you what a cute accent it made on my kitchen wall shelf. Fun huh!!!

What do you think?

Under Construction

Hi there. Remember me? I am the gal that used to post on this blog everyday.
Then I went away...across the country.
And somehow couldn't find the time to write anything interesting.
Except how the weather sucked large on the opposite end of my wonderful country. I am sure it isn't always cold, rainy and windy in BC but it was awful!

Annnnyways, I am home, back to the routine of yelling, cleaning and cooking in my own home.
Just the way I like it.

Let me fill you in on my weight loss progress as of last Wednesday.
Before I went away and ate at restaurants.
Before I went away and enjoyed roast beef and turkey dinners.

Last Wednesday I was down 22 1/2 pounds.
I officially entered the land of "The 150's" and did a happy dance when I saw the number on the scale.
This is huge people.
H-U-G-E.

I am 8 pounds from my goal weight but to be honest, I am happy where I am right now. I just need to tone my flab and I will be a happy Momma.

While away I behaved myself.
I did not drink alcohol.
I did not eat dessert.
I only drank water.
Instead of ordering a burger and fries for lunch, I ordered a wrap. *gag*
I didn't eat Yorkshire pudding with roast beef and gravy.
I loaded up on veggies instead of mashed potatoes.

Annnnnnd.....I worked out in the gym at the hotel.

Yay me!

Tomorrow I weigh in.
Please pray for me.
Pray that I have stayed the same or went down even a little bit.

And if I have, I might even celebrate it with some chocolate Easter eggs.

Just because.

Test Post

I tweeted the other day about how we were having my Monnie's chicken spaghetti for dinner. C.C. asked for the recipe and I am ever so happy to oblige!

Before I post the recipe, I must confess that raw chicken absolutely freaks me out. In lieu of the fresh meat used in the following recipe, I use two cans of chicken breast chunks (in water). I shred the chunks, which makes the dish really smooth. Call me a chicken (hee, hee), but I do not feel I can get my kitchen clean enough after handling it. Especially when I still have a child who occasionally licks the dirty dishes in the dishwasher and scoots her bare bottom across the floor. :)

If you really want to knock your socks off, I suggest not trying to make this recipe using healthier ingredients. I substitute whole wheat spaghetti and 2% velveeta sometimes, which works okay, but we can definitely tell a difference. Don't say I didn't warn you.

Now on to the good stuff:

Monnie's Chicken Spaghetti

1 hen or 2 fryers
1 stick margarine
1 medium white onion, chopped
1 large bell pepper, chopped
1 can Ro-Tel tomatoes, undrained
1 1/2 lb. Velveeta cheese
1 cup chicken broth
1 lb. spaghetti

1. Preheat oven to 350 degrees.
2. Boil the chicken and remove the meat from the bones.
3. Saute the onions and bell pepper in the margarine until soft.
4. Cook and drain the spaghetti.
5. Add the broth to the spaghetti.
6. Cut up the velveeta into cubes and let melt with the broth and spaghetti.
7. Add the chicken.
8. Add the bell pepper and onion mixture.
9. Add the Ro-Tel and stir until all ingredients are blended together.
10. Pour into casserole dishes.
11. Bake until cheese is bubbly.

This recipe freezes well. It is even better the next day, straight from the fridge as a snack or reheated for lunch.

Some of you may remember me talking about how we're trying to eat healthier. We were rolling right along and doing really well until we realized it was the last week of summer vacation and we wanted to EAT!!!!

This week, I made all of our favorites. Starting tomorrow, it's the Shred for me and all the coke and sugar leaves the house. :)

Not tonight, though. Tonight we're having something we have not had for a couple of months. Tonight, we shall drown the dread of Lane having to return to school in a true red meat and potatoes fashion. Steaks, salads swimming in ranch, loaded baked potatoes, and Chocolate Thunder From Down Under for dessert. YUM!

Sigh. Still dreading tomorrow. It was such a fun summer. So sad to see it end. Boo hoo hoo. :(
